Massaman Phak (Vegetable Massaman Curry)
Try this homemade Thai massaman curry recipe, which is made entirely from scratch. This vegetable curry is of Muslim origin and is a classic Thai dish!

100g carrots (sliced)
100g potatoes (cubed)
100g pumpkin (cubed)
100g sweet peas
1 onion (cubed)
4-5 tbsp Valcom Massaman Curry Paste
2 tbsp oil
400ml coconut milk
2 tbsp fish sauce
1 tbsp sugar
1 tbsp tamarind puree
- Precook all vegetables, set aside.
- Stir-fry massaman paste in heated oil over low heat for 1-2 mins, slowly add 200ml coconut milk and stir-fry over medium heat until fragrant and the oil appears.
- Combine all vegetables and stir through, add fish sauce, sugar and tamarind puree.
- Add the remaining coconut milk, bring to the boil and cook until all vegetables softened. Remove from heat.
- Serve with steam rice.
