Massaman Phak (Vegetable Massaman Curry)
Thai Vegetable Massaman curry


Try this homemade Thai massaman curry recipe, which is made entirely from scratch. This vegetable curry is of Muslim origin and is a classic Thai dish!

Ingredients:

100g carrots (sliced)
100g potatoes (cubed)
100g pumpkin (cubed)
100g sweet peas
1 onion (cubed)
4-5 tbsp Valcom Massaman Curry Paste
2 tbsp oil
400ml coconut milk
2 tbsp fish sauce
1 tbsp sugar
1 tbsp tamarind puree




Steps:
  1. Precook all vegetables, set aside.
  2. Stir-fry massaman paste in heated oil over low heat for 1-2 mins, slowly add 200ml coconut milk and stir-fry over medium heat until fragrant and the oil appears.
  3. Combine all vegetables and stir through, add fish sauce, sugar and tamarind puree.
  4. Add the remaining coconut milk, bring to the boil and cook until all vegetables softened. Remove from heat.
  5. Serve with steam rice.
