Traditional Fried Rice

Not many would agree, but traditional fried rice can actually be the quintessential comfort food. A simple fried rice recipe can do wonders in an otherwise everyday Western kitchen. A bowl of steaming white rice sprinkled with bits of fresh meats and vegetables? It doesn’t get any better than that. This is what makes the traditional fried rice one of the most popular dishes in the world. In American-Chinese restaurants, this dish is sometimes called special fried rice.

Ingredients:

500g Golden Phoenix Jasmine Rice (cooked and cooled)
1 onion
2 spring onions
2 egg (beaten)
2 tsp water
120g char siu pork
1 tbsp oil
4 tbsp Lee Kum Kee Premium Oyster Sauce
2 tsp soy sauce
fried shallots (to garnish)




Steps:
  1. Heat oil in a large wok over a medium heat and brown onions for 2 mins.
  2. Add the spring onions to the wok and stir fry for 1 min, remove and set aside.
  3. Beat eggs and water together. Return the wok to the heat and pour the egg in to make a thin omelette, remove and cool on a plate; then slice.
  4. Return the wok to the heat along with the onions, diced pork and rice, then stir fry for 4 mins; add in cooked rice and drizzle over the combined sauces and heat through.
  5. Toss through the sliced omelette and serve garnished with fried shallots.

5 Secrets to Making the Perfect Traditional Fried Rice

  1. Use leftover cooked rice.Cold, leftover rice is great for fried rice. This is because the rice grains will firm up, making it easier to separate and decreasing the chances of your fried rice turning out mushy. So, make sure your Chinese fried rice recipe includes it.
  2. Use medium to long grain rice. Medium grain jasmine rice is the best choice for fluffy, sturdy grains that don’t clump or fall apart when fried.
  3. A hot wok. A blazing hot wok and an adequate amount of peanut oil will ensure your ingredients don’t stick to the surface. That’s how restaurants achieve the burnt flavour in their stir-fried dishes. Remember to preheat your wok before adding ingredients.
  4. Use the biggest pan available in your kitchen. When you have too many ingredients, the wok doesn’t get hot enough and your ingredients will get soggy causing the rice to clump together. Cook each ingredient individually and remove to separate plates. Return all the ingredients to the pan at the end for the final mixing and seasoning.
  5. Don’t overdo the seasonings. This applies to soy sauce and oyster sauce. Too much sauce will make your rice mushy.
