Tom Yum Soup with Prawns Recipe


The most iconic Thai food, Tom Yum Soup with Prawns has been famous worldwide. The balance of pungent flavours of seasoning and herbs makes it a great appetiser.

Ingredients:

4-5 large green prawns (peeled and deveined)
3 cups water
2-3 tbsp lime juice
2-3 tbsp fish sauce
3-4 tbsp Valcom Lemongrass
10 pieces straw mushroom (cut halved) or fresh champignon or other kind mushroom
3-4 tbsp Valcom Kaffir Lime Leaves
10 bird eye chilli (a little crushed)
1 sprig fresh coriander (coarsely chopped)




Steps:
  1. In a sauce pan, bring water to the boil over medium heat.
  2. Boil the prawns’ heads and peels for 2 mins and remove. Use only the stock.
  3. Bring the stock to the boil, adding lemongrass for half a minute, then add mushroom, prawns, kaffir lime, fish sauce, lime juice and chilli.
  4. Remove from heat and serve in soup bowls. Garnish with fresh coriander.
