Tom Kha Soup


Tom Kha soup recipe is Thai coconut chicken soup. It is a warming and creamy soup and is loaded with fragrant herbs and spices.

Ingredients:

500g chicken (breast fillet or thigh cutlet, cut into bite size)
400ml coconut milk
1½ cups water
200g champignon or portobello mushrooms
50g fresh galangal (thinly sliced)
4 tbsp lemongrass
4 tbsp kaffir lime leaves
4 tbsp quid fish sauce
1 tsp sugar
3-4 tbsp lime juice
½ cup fresh coriander leaves
Red chilli (for garnish)




Steps:
  1. Combine coconut milk and water in a saucepan and place over high heat until boiling. Add galangal, chicken, fish sauce, lime juice and sugar. Allow to boil for a few minutes before adding lemongrass and kaffir lime leaves.
  2. While boiling, add mushrooms and boil until just cooked before removing from heat. Garnish with red chilli and coriander before serving as an entree.
