Tofu and Mushroom Green Curry Recipe


The melt-in-your-mouth pieces of tofu along with juicy bites of button mushrooms is absolutely perfect along with the aromatic spicy green curry base. Try this Thai recipe.

Ingredients:

400ml TCC Coconut Milk Lite
3 tbsp Valcom Green Curry Paste
1 tsp Squid Brand Fish Sauce
1 tsp sugar
2 cups button mushrooms
1 cup eggplant (cubed)
400g firm tofu (cubed)
½ jar Valcom Kaffir Lime Leaves (thinly sliced)
1 cup fresh basil leaves




Steps:
  1. Bring coconut milk, curry paste, fish sauce and sugar to boil in a wok; stir occasionally.
  2. Add mushrooms and eggplant; simmer for 2 mins or until cooked.
  3. Add tofu, kaffir lime leaves and basil leaves. Simmer for 1 min and remove from heat.
  4. Serve hot with steamed rice.
