Thai Fried Rice


Thai fried rice dish is a staple of Thai cooking. It's simple to make and a great way to use leftover rice.

Ingredients:

650g (3.25 cups) Jasmine rice (cooked and cooled)
50g Mae Ploy Thai red curry paste
125g pork (thinly sliced)
125g shrimp (shelled and deveined)
1 onion (thinly sliced)
4 tbsp cooking oil
cucumber (thinly sliced)
coriander (chopped; for garnish)
chilli (chopped; for garnish)
spring onion (thinly sliced; for garnish)
1 lime (cut into wedges; for garnish)




Steps:
  1. Heat oil in a wok, add onions and fry until soft.
  2. Add prawns, pork and red curry paste, saute until pork is done.
  3. Add rice and stir continuously until well mixed and fairly dry. Push the mixture to one side of the pan.
  4. Add eggs, stir-fry until done and stir into rice.
  5. Garnish and serve with cucumber.
