Stir-fried Yellow Curry with Chicken (Gai Pad Gaeng Garee)


Use your Thai Yellow Curry paste in a stir-fry to whip up a quick and delicious meal in less than 30 minutes.

Ingredients:

2 tbsp oil
½ jar Valcom Yellow Curry Paste
500g chicken breast fillets (thinly sliced)
1 onion (cut into wedges)
1 tbsp fish sauce
2 tsp sugar
¼ cup coconut milk
1 spring onion (cut into 2cm lengths)
1 red chilli (julienned)




Steps:
  1. Heat oil over low heat. Add Valcom Yellow Curry Paste and stir-fry until fragrant. Add chicken and stir over high heat until cooked.
  2. Add onion, fish sauce, sugar and coconut milk. Stir through until onion is tender.
  3. Add spring onion and red chilli, then remove from heat.

Tips: Green prawns can be used in place of chicken.
