This stir-fry seafood combination thai dish contains a generous serving of seafood - green prawns, squid, mussels and scallops. Try this recipe.

Ingredients:

8 green prawns (peeled and deveined)
1 squid tube (cleaned and scored on inner side; sliced)
8 mussels
8 scallops
½ capsicum (cut into diamonds)
4 green beans (sliced diagonally and blanched)
1 cup water
3 tsp Squid Fish Sauce
2 tsp Lee Kum Kee Premium Soy Sauce
Jeeny's Palm Sugar (half a cube)
2 kaffir lime leaves
1 tbsp basil leaves (for garnish)
1 red chilli (sliced diagonally; for garnish)
Salt to taste

Curry paste
1 tsp ginger
1 tsp Lee Kum Kee Minced Garlic
½ medium onion
1 tbsp Valcom Lemongrass
2 tbsp Valcom Red Curry Paste
black pepper (to taste)




Steps:
  1. Make curry paste by blending all ingredients in a food processor.
  2. Heat up the pan with the oil, add the curry paste and lime leaves and stir until golden and fragrant.
  3. Add the seafood together with one cup of water, stir until cooked and add the rest of the ingredients.
  4. Garnish with basil and chilli.
