Pad Panaeng Gai (Stir-Fried Panaeng with Chicken)
Stir Fried Panaeng with Chicken


A simple Thai classic full of flavours, this Stir-Fried Panaeng Curry is a rich chicken curry mixed with coconut milk and Thai ingredients for a hearty meal.

Ingredients:

400g chicken fillets (thinly sliced)
4 tbsp Valcom Panaeng Curry Paste
2 tbsp oil
1 cup coconut milk
1 tbsp fish sauce
1 tbsp sugar
2 tbsp Valcom Kaffir Lime Leaves
1 red chilli (julienned)




Steps:
  1. Heat oil in a wok or frying pan, stir-fry the Panaeng Curry Paste over low heat for 1-2 mins, slowly add half coconut milk and stir fry over medium heat for a further 2 mins, or until fragrant and the oil appears.
  2. Add the chicken, stir-fry over high heat. Add fish sauce, sugar, kaffir lime leaves and the remaining coconut milk, until well cooked.
  3. Add red chilli before removing from heat.
  4. Your Stir-Fried Panaeng with chicken recipe is ready!
