Ingredients:

500g chicken stir-fry strips or thigh fillet (cut into strips)
1 tbsp corn flour
1 tbsp dry sherry
1 bunch gai choy (Chinese mustard; cut into 7cm pieces)
1 tsp minced ginger
½ tsp Lee Kum Kee Minced Garlic
4 tbsp Lee Kum Kee Panda Oyster Sauce
1 tbsp cooking oil




Steps:
  1. Marinate chicken in corn flour, dry sherry and ginger for 30 mins.
  2. Wash and cut gai choy (discard any old or tough leaves).
  3. Heat ½ tbsp oil in a wok, add garlic and gai choy, and stir-fry for 2 mins. Remove from wok.
  4. Heat remaining oil in wok and stir-fry chicken for 5 mins.
  5. Add oyster sauce and vegetables and combine well.
  6. Serve your stir-fried ginger chicken on a bed of rice or noodles!
