Steamed Custard in a Pumpkin Shell

Ingredients:

2 golden nugget pumpkins
1 cup TCC Coconut Cream
5 eggs
½ cup brown sugar




Steps:
  1. Combine coconut cream, eggs and sugar.
  2. Slice off the top of the pumpkin and scoop out the seeds.
  3. Fill the pumpkin with coconut mixture and steam gently for 30 mins.
  4. Refrigerate and serve chilled.

Hint: Ensure you use a steamer which has a vent, as excess moisture prevents custard from setting.
