Southern Thai Salad
Southern Thai Salad Recipe


A traditional Southern-style Thai salad that contains vermicelli, coriander, chillies and tossed in with a plethora of other ingredients. Try this healthy Thai recipe.

Ingredients:

1 tbsp coriander root (washed and chopped)
2 tbsp coriander leaves and stems (washed and chopped)
1 tsp garlic (coarsely chopped)
1½ tsp hot red chillies (chopped)
2 tbsp Squid Fish Sauce
2 tbsp white vinegar
3 tbsp freshly squeezed lime juice
4½ tsp sugar
¼ tsp salt
250g prawns (deveined, cooked and chopped)
100g bean vermicelli (soaked in boiling water for 10 mins, then drained and rinsed in cold water)
120g pork or chicken (cooked and thinly sliced)
50g Chinese celery
2 shallots (thinly sliced)
1 tomato (cut into 8 wedges)
1 Chinese lettuce (chilled)




Steps:
  1. Combine chillies, garlic and coriander in a bowl.
  2. Add fish sauce, vinegar. Lime juice, salt and sugar.
  3. Mix well and set aside.
  4. Mix the cooked meats and prawns with the shallots, celery, vermicelli and tomato.
  5. Toss with the prepared dressing.
  6. Serve salad on a bed of chilled lettuce.

Hint: The dressing in this recipe can also be used as a dipping sauce with finger food.
