SHIITAKE NIGIRI (MUSHROOM SUSHI)
Shiitake Nigiri


This simple sushi recipe is for mushroom lovers. Shiitake mushrooms have a distinctive taste, inexpensive and is a blessed addition to any dish - especially vegans. Pack these morsels of goodness in your bento (lunchbox) for a wholesome lunch!

Serves:3 to 4
Total time: 15mins - 30mins

Ingredients:

10 fresh shiitake mushrooms (stem removed)
1 cup cooked sushi rice
Sea salt for sprinkling
2 lemons (cut into wedges)




Steps:
  1. Using a sharp knife, score mushroom caps with an asterisk pattern but avoid cutting through flesh.
  2. Boil mushrooms for 1-3 mins, or until tender and darkened. Sprinkle a little salt on mushroom caps.
  3. Make sushi using nigirizushi method, placing mushrooms either upside-down or right-side up. Serve with lemon wedges. Squeeze on lemon juice before eating.
