Samgyupsal Gui (Grilled Pork Belly)


The Samgyupsal Gui is a must have during Korean BBQ! There’s nothing like serving this dish right off the grill for tender, juicy, caramelised perfection. It’s also common to grill sliced onions, mushrooms or kimchi with the pork belly

Ingredients:

450g pork belly (cut to bite size)

3-4 cloves garlic (thinly sliced)

2 green chilli peppers (roughly sliced)
3-4 scallions (thinly sliced)

2 heads of red or green lettuce (or perilla leaves)

Sesame oil sauce:


2 tbsp sesame oil
1 tbsp salt

Black pepper (to taste)

Ssamjang (sauce):


1 tbsp gochujang (Korean red chili pepper paste)

2 tbsp doenjang (Korean soybean paste)

1 tsp minced garlic

2 tsp sesame oil

1 tsp sesame seeds

1 tbsp rice wine (optional)

Sides (optional):


Steamed rice

Green leaf lettuce leaves

Gochujang (Korean red chili pepper paste)

4-5 garlic cloves (thinly sliced)

Korean green chilli pepper (thinly sliced)




Steps:
  1. Prepare the vegetables. Mix the sauce ingredients in a small bowl.
  2. Heat the grill or skillet. Turn to medium heat and add the meat to the grill along with the garlic, chilli peppers, and any other vegetables of your choice. Cook for about 2-3 mins then flip over to cook the other side. To keep your meat juicy and tender, do not overcook.
  3. Grill the meat in batches and eat them straight off the grill. Dip the meat slices into the ssamjang prepared in Step 1 and enjoy!
  4. To make this dish a fuller meal, serve with steamed rice or as a wrap. First, put a leaf of lettuce in your palm. Add a dollop of gochujang (Korean chilli pepper paste), a sliver of garlic and a piece of chopped green chilli pepper.
