Rice Noodle Soup with Soy Chicken


Another one-dish meal which is both quick and economical to make. The traditional Cantonese flavour is provided in minutes by a ready-made marinade.

Ingredients:

200g Erawan Rice Stick Noodles (broadest width)
410ml Lee Kum Kee Chicken Marinade
100ml water
4 chicken drumsticks
6 cups chicken stock
1 bunch green choy sum (cut into 10cm pieces)




Steps:
  1. Prepare rice stick noodles as per pack instructions.
  2. Place chicken marinade, water and chicken in a sauce pan. Bring it to boil. Turn down the heat and simmer for 15 mins. Turn the heat off, allow chicken to complete cooking process with the lid on the sauce pan for 10 mins.
  3. Bring stock to the boil in a large pot. Add choy sum, simmer for 2 mins.
  4. Remove chicken from the saucepan, cut into pieces; set aside.
  5. Divide noodles, stock and choy sum among 4 serving bowls. Top with pieces of chicken; serve.

Tip: Chicken can be served separately, if preferred.
