Prawn Yellow Curry

Perfect Friday night food, a warming low fat prawn curry ready in less than 30 minutes! Try this delicious Thai prawn yellow curry.

Ingredients:

16 pcs fresh prawns (remove shell and deveined; leaving tail intact)
50g carrot (cubed)
400ml TCC Coconut Milk
5 tbsp Valcom Yellow Curry Paste
1 cup water
4 tsp vegetable oil
1 tbsp Squid Fish Sauce
1g Sugar
3 medium-size potatoes (cooked and cut into quarters)
100g cherry tomatoes
2 tbsp Valcom Kaffir Lime Leaves
1 cup coriander leaves
red chilli (to garnish)
fried Shallots (to garnish)




Steps:
  1. Stir-fry yellow curry paste with oil over low heat until fragrant, add kaffir lime leaves.
  2. Slowly add coconut milk, potato, water, fish sauce and sugar. Stir well and bring to the boil. Add prawn meat, gently stir-fry over high heat.
  3. Add tomatoes to curry, simmer for a few minutes before adding red chilli and coriander leaves.
  4. Remove from heat. Serve with steamed Thai Moon Jasmine Rice.
