Prawn And Vegetables In Coconut Milk (Ginataang Kalabasa At Sitaw)

Ingredients:

1 tbsp oil
1 onion (peeled and thinly sliced)
2-3 garlic clove (peeled and minced)
1 tbsp fish sauce
2 cups coconut milk
1 banana chili pepper
2 cups kalabasa / kabocha squash (skin removed, deseed and cut into small chunks)
2 cups sitaw / long beans (ends trimmed and cut into 8cm lengths)
250g large shrimps (tendrils trimmed)
salt (to taste)




Steps:
  1. Heat oil in pot over medium heat. Put in onion and garlic and cook until softened. Stir in fish sauce and cook for 1 min.
  2. Add in coconut milk and chilli, simmer on low heat for 5 mins. Throw in the squash and cook for 5 mins before adding the long beans, cooking for another 5 mins.
  3. Finally, add in shrimps and cook for until pink, about 5 mins. Add salt to taste.
  4. Serve hot over steamed rice.
