Pork Ribs Herbal Soup (Ching Bo Leung)

Ingredients:

3 cups water
700g pork ribs (cut into bite-sized pieces)
45g huai shan (dried Chinese yam)
60g yi mi (Chinese pearl barley)
25g lian zhi (dried lotus seeds)
20g qian shi (fox nut barley)
10g gou qi (dried goji berries)
15g yu zhu (polygonatum odoratum)
10g qui yuan rou (dried longan)
2 mi zao (dried honey dates)
2L water
Salt (to taste)




Steps:
  1. First prepare the pork by adding to vigorously boiling water for 10 minutes. Discard the water and remove any impurities from the pork ribs.
  2. In a large pot, bring 2L of water to boil, add the blanched pork and all of the herbs.
  3. Turn down heat to low and let simmer for at least 2 hours.
  4. Season with salt to taste, turn the heat back up and bring the soup to a boil before turning off the heat. Serve hot.
  5. If herb ingredients are not easily obtained, there are pre-packed Ching Bo Leung soup mix available at Asian grocery stores.
