Pork Adobo

Ingredients:

1kg pork belly (cut into 5cm cubes)
1 tbsp oil
1 cup vinegar
1/2 cup soy sauce
1 cup water

Marinate Ingredients

1 onion (peeled, thinly sliced)
1 bulb garlic (peeled, and finely minced)
2 bay leaves
1 tsp salt
1/2 tsp pepper




Steps:
  1. Combine pork belly and marinate ingredients in a large bowl. Mix well and place in the refrigerator to marinate for at least 30 minutes.
  2. Heat oil in a wide based pan over medium heat. Add marinated meat to cook, turning occasionally.
  3. Add in vinegar and allow to boil for about 5 minutes.
  4. Lastly add in soy sauce and water. Gently stir and allow to a boil for another 5 minutes. Then cover pan with lid, turn heat down to low and allow to simmer for about 45 minutes, or until meat is tender.
