Pla Goong (Spicy Grilled Shrimp Salad)

The Pla Goong is the perfect dish for summer! These spicy grilled prawns which are complemented by colourful fresh herbs is a total crowd pleaser and requires only five minutes’ cook time. Serve it in as a dish with steamed rice, or in shot glasses

Ingredients:

For the salad:

340g shrimp (peeled and deveined)
3 cups chopped lettuce
⅓ cup mint leaves
⅓ cup cilantro leaves
⅓ cup shallots (sliced thinly)
⅓ cup red onion (sliced thinly)
⅓ cup lemongrass (sliced thinly)
5 bird’s eye chillies (sliced thinly)

For the dressing:

2 tbsp roasted chilli paste
1 tbsp palm sugar
2 tbsp fish sauce
2 tbsp lime juice
Coriander leaves (optional, to serve as prawn cocktails)




Steps:
  1. Combine the sauce ingredients and mix well.
  2. Peel and devein the shrimp. Brush a bit of oil on both sides and then grill until they’re cooked through.

To serve as a dish with steamed rice:

  1. Chop the vegetables, transfer in a bowl and dress with sauce.
  2. Finally, add the grilled shrimp to the bowl and toss everything together.
  3. Serve Pla Goong with steamed rice and other dishes.

To serve as prawn cocktails:

  1. Fill shot glasses with 2-3 tbsp of sauce.
  2. Place one prawn in each shot glass. Let the tail curl and hang out of the glass. Garnish with coriander leaf and serve immediately.
