Pineapple and Chicken Rice


A stir-fried rice dish consisting of marinated chicken and colourful vegetables. Easy to make. Try this Chinese recipe.

Ingredients:

500g chicken thigh fillets (diced)
225g pineapple pieces
½ onion (diced)
½ green capsicum (diced)
1 carrot (sliced)
3 slices ginger
3 cups Golden Phoenix Jasmine Rice (cooked)
2 tbsp vegetable oil

Marinade

4 tbsp Lee Kum Kee Premium Oyster Sauce
2 tbsp Lee Kum Kee Premium Soy Sauce
2 tbsp water
1 tsp Yeo's Sesame Oil




Steps:
  1. Combine marinade ingredients, add chicken and ginger and stir to coat. Allow to marinate for 30 mins.
  2. Heat oil in a wok and stir-fry marinated chicken until nearly cooked, add carrot, onion, capsicum and stir-fry for 3 mins.
  3. Stir the cooked rice through the chicken and vegetables and allow to reheat. Add the pineapple just before serving.
