Pad Thai with Prawn (Pad Thai Goong)


Pad Thai Goong is a tasty Thai dish that is the perfect combination of the popular Pad Thai and some crunchy prawns.

Ingredients:

200g Erawan Pad Thai Noodles (prepared per package instructions)
300g green prawns (peeled and deveined)
1 jar Valcom Pad Thai Paste
3 tbsp oil
2 tbsp chopped onions
2 eggs
100g fresh beansprouts
1 cup Chinese leek or spring onion (cut 2cm length)
½ cup ground roasted peanut (optional)




Steps:
  1. Blanch prawns in boiling water for 1 min. Drain and set aside.
  2. Heat 2 tbsp of oil in a large frying pan, add chopped onions and stir-fry on low heat until fragrant. Add Pad Thai noodles and stir-fry until softened, some water can be added.
  3. Add Pad Thai Paste and stir to mix. Push the mixture to one side of the pan. Add 1 tbsp of oil, bring to medium heat and add the eggs.
  4. Wait for 1 min for the eggs to set, then add the prawns; stir-fry until everything is well mixed in the pan.
  5. Add beansprouts and Chinese leek and stir through before removing from heat. Garnish with ground roasted peanut before serving.
