Miso Grilled Chicken

Miso enhances anything it touches. A versatile marinade for a variety of protein including chicken, beef, fish and even scallops, marinating with miso makes them more tender and flavourful. Try this simple-to make weeknight meal is perfect for your everyday cooking.

Serves:3 to 4
Total time: 30mins - 60mins

Ingredients:

¼ cup yellow miso paste
3 tbsp mirin
2 tbsp sake
1 tbsp sugar
1 tbsp soy sauce
4 chicken thighs (see note)

Note: Allow chicken to marinate for at least 3 hrs or overnight for maximum flavour.




Steps:
  1. Mix miso, mirin, sake, sugar, and soy sauce in a bowl. Marinade chicken thighs in miso mixture for at least 3 hours, or overnight.
  2. Preheat oven to 220°C. Use paper towels to wipe marinade off from the chicken and place it on oiled aluminium foil spread over a sheet pan. If the marinade is not wiped off from the chicken, it would make the dish saltier.
  3. Bake for 15 mins, turn over and bake 10-15 mins more until cooked through.
