If you have ever visited Singapore, you may have sampled this traditional Malaysian meal, which has a unique seafood flavour provided by dry shrimps

Ingredients:

250g vermicelli noodles
1 tbsp cooking oil
2 cloves garlic (crushed)
2 tbsp dried shrimps (finely ground or minced)
2 tbsp chilli sauce
3 tbsp salted soya beans
1 cup bean shoots
1 tsp salt (optional)
1 tsp sugar
1 cup Chinese chives (cut into 5cm pieces)
1 lime (quartered)
2 hard-boiled eggs (sliced)
1 tbsp fried shallots




Steps:
  1. Cook rice vermicelli in boiling water for 3-4 mins until tender. Drain and set aside.
  2. Heat oil in wok. Add garlic, dried shrimp, chilli sauce and soya beans; stir-fry until fragrant.
  3. Add vermicelli, bean shoots, salt and sugar. Toss for 5 mins until well-combined.
  4. Add chives and mix well.
  5. Garnish with lime wedges, sliced egg and fried shallots. Serve.
