Meat Free Sushi in Jar


Look forward to lunch when you make these fun meals in a jar. Compact and wholesome, this Meat-Free Sushi in a Jar will keep you going for the rest of the day. Follow the recipe or, layer it with your favourite ingredients. Prep your meals over the weekend and you won’t have to worry about lunch again!

Ingredients:

1 cup cooked sushi rice (cooled)
2 tbsp sushi rice seasoning (or 2 tbsp vinegar + 2 tbsp sugar + ½ tsp salt)
¼ tsp ginger (grated)
½ cucumber (thinly sliced)
1 carrot (grated)
1 red cabbage leaf (thinly sliced)
½ cup edamame beans (soybean, blanched)
Egg omelette* (shredded, *use 2-3 eggs)
1 package hiyashi wakame (seaweed salad, optional)
4-6 tbsp teriyaki sauce (to serve)




Steps:
  1. Add sushi rice seasoning to rice and mix well.
  2. Gather all the ingredients and prepare clean jars. Depending on the size of the jars, this recipe makes about 2-3 meals.
  3. Start by adding 3-4 tbsp rice to the bottom of the jar, then layer on the omelette, edamame, carrot, red cabbage, cucumber, and top with seaweed salad. Repeat with another clean jar, or until all ingredients are used.
  4. Seal and refrigerate up to 3 days. Drizzle 2-3 tbsp teriyaki sauce before digging in.
