Marinated Grilled Fish with Vegetable Nori Rolls
Marinated grilled fish


A deliciously light summer meal incorporating the essence of Japanese cuisine - sushi. Using premium products and fresh ingredients, you can create this restaurant-quality dish easily at home.

Ingredients:

4 Kingfish fillets or any white flesh fish
50ml Obento Sushi Seasoning
4 sheets Obento Yaki Nori
1 cucumber (sliced lengthwise)
1 avocado (sliced thinly)
1 red capsicum (sliced thinly)
Kewpie Mayonnaise (to taste)
S&B Wasabi Paste (to serve)

Marinade

100ml Obento Mirin Seasoning
1 lemon (juiced and zested)
2 tsp soy sauce
400g Kokuho Rose Rice (cooked and cooled)




Steps:
  1. Preheat BBQ or griddle pan. Combine mirin seasoning, lemon juice, zest and soy sauce in a bowl and marinate kingfish fillets. Set aside.
  2. Sprinkle cooled rice with sushi seasoning and mix well. Place the nori shiny side down on a bamboo rolling mat. Spread the rice evenly over the nori, leaving a 2cm strip to seal. Dab a small amount of mayonnaise and wasabi along the centre of the rice and top with a selection of sliced vegetables. Lift the mat and roll sushi tightly; brush nori with a little water and seal roll. Repeat with remaining ingredients.
  3. Heat griddle pan or BBQ over medium heat and cook fish for 2 mins on each side or until cooked.
  4. Cut rolls into 3cm sized pieces and place sushi into the centre of the serving plate. Top sushi with the grilled fish and serve with lemon wedges.
