San Choy Bow (Lettuce Cups)
Lettuce Cup (San Choy Bao) Recipe


San Choy Bow is minced meat and diced vegetables presented in a lettuce cup and makes for a nice party starter. Try this Chinese recipe.

Ingredients:

4 lettuce leaves (trimmed to form cups)
1 tbsp olive oil
1 garlic clove (minced)
1 tbsp onion (chopped)
300g lean pork mince
2 tbsp oyster sauce
2 tbsp water
2-3 whole water chestnuts (canned or fresh, diced)
2-3 whole shiitake mushroom (soaked and diced)
1 carrot (peeled and diced)
2 tbsp hoisin sauce
1 stalk spring onions (diced as garnish, optional)




Steps:
  1. Place lettuce cups on to serving plates.
  2. Heat oil in a wok; add garlic and onions and stir-fry for 1 min.
  3. Add pork and oyster sauce; stir-fry for 2 mins. Add water and simmer covered for 1 min.
  4. Toss in water chestnuts (diced), mushrooms and carrots; stir through Hoisin sauce. Stir-fry for 2 mins and remove mixture from heat.
  5. Spoon meat mixture into lettuce cups, garnish with spring onions and serve.
