Laksa is a popular spicy noodle soup from the Peranakan culture, which is a merger of Chinese and Malay elements. Try this south east asian dish.

Ingredients:

1 jar Lingham's Laksa Paste
1 tbsp Yeo's Sesame Oil
400ml water
200g green prawns (peeled and deveined)
150g squid rings
50g gluten-free fried bean curd puffs (sliced)
2 tomatoes (quartered)
5 Thai basil sprigs
1 can or 400ml of coconut cream




Steps:
  1. Stir-fry laksa paste in heated sesame oil until fragrant.
  2. Add in water and bring to the boil.
  3. Add prawns, squid rings, bean curd puffs and simmer until cooked.
  4. Add tomatoes, Thai basil and simmer for 1 to 2 mins. After simmering, stir in the coconut cream.
  5. Serve hot with a bowl of steamed rice.

Tip: Add 1 tsp of Yeo’s Sambal Oeleck and lime slices for a spicier meal.
