Kuri Kinton (Sweetened Chestnuts And Sweet Potato)


For those with a sweet tooth, this dessert is perfect for you! The sweet, creamy and sticky texture of the sweetened chestnuts and sweet potato is similar to that of a jam. As the colour of this dessert is yellowish-gold, it represents a wish for wealth and a fruitful new year.

Ingredients:

300g purple sweet potato
1 jar sweetened chestnuts
2 tbsp sugar
1 tbsp mirin
1/2 cup of the syrup from the jar of sweetened chestnuts




Steps:
  1. Peel the sweet potatoes, chop into small chunks and soak it in a bowl of water for about 2 hrs.
  2. Boil it in a pot of water until it becomes soft.
  3. While the sweet potato is still soft, strain it through a sifter to make it into a puree.
  4. Mix the sugar, syrup and mirin in a saucepan and cook over low heat until it starts to simmer.
  5. Turn the heat off, add pureed sweet potato and mix them well together.
  6. After mixing it well, cook over low heat for 15 mins. Keep stirring to avoid mixture from sticking to the bottom.
  7. Turn off the heat, add the chestnuts and cover them with the pureed sweet potato mixture. Serve cool.
