Kuih Seri Muka (Glutinous Rice With Pandan Custard)


Kuih seri muka also known as kuih salat and is a popular Malay and Nyonya dessert, made of glutinous rice, coconut milk and flavoured with fragrant pandan leaves. This dessert is a beautiful marriage of salty sweetness in a soft, chewy texture formed by a glutinous rice base, topped with a layer of pandan custard.

Ingredients:

Glutinous rice (pulut)

500g glutinous rice (pulut, wash and soak for 5 hrs)
1 tsp salt
200ml coconut milk

Topping

150g plain flour
270g sugar
2 eggs
200ml pandan juice (extract from 300g pandan or screwpine leaves)
400ml coconut milk




Steps:
  1. Place soaked rice in a 23cm metal tray.
  2. Add coconut milk making sure it is enough to cover rice, add water if insufficient. Add salt.
  3. Steam rice mixture until cooked. When cooked, mix well and press down in tray until firm.
  4. In a mixing bowl, add in eggs and sugar and mix well. Then, add coconut milk and pandan juice.
  5. Mix in plain flour.
  6. Sieve mixture and add to the top of cooked rice and steam for another 30 mins.
  7. Leave to cool entirely before slicing. Serve with coffee or tea.
