Kimchi Fried Rice (Kimchi Bokkeumbap)
Kimchi Fried Rice


Spice up your fried rice with the Korean superfood, Kimchi. This Kimchi Fried Rice is tangy, spicy and the perfect way to use up leftover ingredients. Recipe by Asian Inspirations.

Ingredients:

1 tbsp sesame oil
1 cup kimchi (chopped)
100g scotch fillet (finely sliced)
Salt and pepper (to taste)
1½-2 cups medium or short grain rice (cooked and refrigerate overnight)
½ tbsp oyster sauce
1 tbsp oil
2-3 eggs
Spring onions (diagonally sliced, to garnish)
Toasted sesame seeds (to garnish)
Nori sheets (cut into thin strips, to garnish)




Steps:
  1. Add 1 tbsp sesame oil to a heated pan. Add kimchi and cook until kimchi starts to soften, about 5 mins. Push cooked kimchi to one side of the pan and add meat and cook quickly until meat is cooked, seasoning the meat with salt and pepper, should take about 2 mins. Stir kimchi and meat together to combine.
  2. Add rice to the meat and kimchi mixture and cook quickly over high heat, stirring until rice is well combined with the rest of the ingredients. Pour some oyster sauce to the fried rice and stir until combined. Season the rice with salt and pepper.
  3. Pour 1 tbsp oil to another heated frying pan and fry eggs sunny side up.
  4. Serve fried eggs on top of kimchi fried rice.
