Japanese Wasabi Miso Eggplant Recipe


Japanese Wasabi Miso Eggplant Recipe is an ideal option for picnics and outings as it has a unique twist with a hint of wasabi goodness. Equally easy and versatile.

Ingredients:

560g eggplants (cut into 1.5cm thick rounds)
olive oil (for pan-fry)
spring onions (thinly sliced, to serve)
white sesame seeds (toasted, to serve)

Wasabi miso paste

3 tbsp white miso
1½ tbsp S&B Wasabi Paste
3 tbsp Obento Mirin Seasoning




Steps:
  1. Heat oil in fry pan, slightly brown both sides of eggplant rounds and set aside.
  2. In a bowl, mix ingredients for wasabi miso paste and whisk well.
  3. Pre-heat oven to 220˚C, brush top of eggplant rounds with paste and grill for 20-25 mins.
  4. Garnish with spring onions and sprinkle with white sesame seeds, serve.
