Inche Kabin also known as Nyonya fried chicken is a popular Peranakan dish in Malaysia. Chicken pieces are marinated with a paste of coconut cream and a selection of flavourful spices. This combination lends a unique flavour to the fried chicken distinguishing it to the others, making it Nyonya style. Inche kabin is served with a tangy sauce to complement the richness of the fried chicken.

Ingredients:

Seasoning

1 tsp salt
5 tbsp coconut cream
1 tbsp coriander powder
1 tsp cumin powder
1 tsp fennel powder
1 tsp chilli powder
½ tsp turmeric powder
½ tsp cinnamon powder (or pound cinnamon until fine)
½ tsp clove powder (or pound clove until fine)

Other ingredients

3 to 4 whole chicken legs (cut into 8 to 10 pieces)
2 cups oil (or high temperature oil)

Dipping Sauce

1 red chilli (deseeded and sliced into thin strips)
½ tsp mustard powder
½ tsp sugar
3 to 4 tbsp Worcestershire sauce
Mix all these ingredients together until the sugar dissolves and leave for at least an hour before serving.




Steps:
  1. Mix all the seasoning well in a bowl and add in the chicken to marinate overnight.
  2. Heat up 4 tbsp of oil to a pan or wok and fry the chicken over low heat till all the seasoning sticks to the meat and the meat cooks through.
  3. Now for the deep frying. Heat the oil until it is very hot and deep fry the chicken for 1 min or till the sizzling subsides. Turn the chicken to ensure it cooks evenly, remove and drain.
  4. Allow the oil to heat up again, deep fry chicken for 1 min, remove and drain. Repeat the process a third time, till the chicken pieces are golden brown. Serve with dipping sauce and prawn crackers.
