Hup Toh Soh (Chinese Walnut Cookies)


Chinese Walnut Cookies are known for their toasty, nutty crunch and fragrance. This recipe is an oldie but a goodie- it only requires five ingredients and steps!

Ingredients:

150g margarine
250g self-rising flour (sifted)
80g caster sugar
80g walnuts (roasted and coarsely ground)
1 egg beaten + a pinch of salt (for egg wash)




Steps:
  1. Cut margarine block into smaller pieces.
  2. In a large mixing bowl, add margarine, sugar and ground walnuts. Using a spatula, mix to combine the ingredients. Continue mixing until dough texture is not sticky.
  3. Pre-heat oven to 180°C.Pinch off some dough (about 1 tbsp) and lightly roll to form into a ball. Use your index finger to make a small depression in the center of each cookie. Place cookies onto a baking paper-lined tray. Leave room between each cookie as they will expand slightly when baked.
  4. Brush cookies with egg wash and bake in preheated oven at 180°C for about 30 – 35 mins, or until golden brown.
  5. Remove from oven and cool completely on a wire rack before storing in an airtight container.
