Hua Sheng Bing (Chinese Peanut Cookies)


These toasty, crumbly, melt in your mouth Chinese Peanut Cookies are a traditional treat that can be whipped up with six rather basic ingredients from your pantry. They tend to disappear fast, so be prepared to make another batch soon!

Ingredients:

2 cups peanuts (shelled and toasted lightly)
1¼ cups rice flour
¾ cup icing sugar
¾ tsp salt
2/3 cup peanut oil
Egg white + a pinch of salt (for egg wash)




Steps:
  1. Using a food processor, grind peanuts to as fine as possible.
  2. In a large mixing bowl, add rice flour, ground peanuts, icing sugar and salt. Stir to mix well. Then, pour in the peanut oil and mix until completely combined.
  3. Pre-heat oven to 190°C.
  4. Divide the dough using a teaspoon. Each teaspoonful of dough forms one cookie. Roll the dough to form a ball. Place onto a baking paper-line tray and gently press the middle of the cookie with your index finger to form a depression.
  5. Brush top of cookie with white egg wash.
  6. Bake in 190°C oven for approximately 18-20 mins, or until golden brown.
  7. Remove cookies from oven and set aside to cool completely on a wire rack before transferring into an airtight jar.
