Golden Fish with Pineapple Plum Sauce


This recipe is a fruity version of sweet and sour fish and is perfect served with freshly-cooked Jasmine rice and a fresh, crisp salad. Try this Chinese recipe.

Ingredients:

1 egg (beaten)
pinch of salt
2 tsp sugar
500g firm fish fillets (ling, sea perch or flake; cubed or sliced)
2-3 tbsp corn flour
2-3 tbsp oil
1 jar Lee Kum Kee Plum Sauce
¼ red capsicum (deseeded and diced finely)
½ cup water
1 canned pineapple rings (sliced finely)




Steps:
  1. Combine egg, salt and sugar. Add fish pieces and toss to coat evenly with mixture. Spread corn flour out on a plate and dip fish to coat with corn flour.
  2. Heat a fry pan or wok over medium-high heat. Add oil and cook fish until golden brown and crispy on both sides. Remove from pan and set aside.
  3. Add plum sauce, capsicum, water and pineapple to pan and bring to the boil. Reduce heat and cook for 1 min. Drizzle sauce over fish and serve.
