Galbi Gui (Grilled Short Ribs)
Galbi Gui


Galbi Gui is a very popular Korean meat dish made from thinly sliced beef short ribs that are grilled to perfection. The short ribs are marinated in a sweet and spicy sauce which consists of Korean pear juice, sesame oil, spicy soybean paste, soy sauce, garlic, sesame oil and sugar. This dish is usually served with a side of lettuce, which is used to wrap a sliced of the sliced beef.

Ingredients:

1 king oyster mushroom (Sliced or cooked as a whole)
1 tbsp sesame oil
¼ tbsp salt
450g beef short ribs
4 tbsp Korean pear juice
3 lettuce leaves
1 cup medium grain rice or calrose (steamed)
4 tbsp ssamjang (Seasoned Soybean Paste with Chili)
4 pine nuts

Marinade

4 tbsp Sempio Ganjang 501 (Naturally Brewed Soy Sauce 501)
4 tbsp Korean pear juice
2 tbsp spring onions (minced)
1 tbsp garlic (minced)
1 tbsp sesame oil
2 tbsp sugar
¼ tsp ground black pepper
1 tbsp ginger juice




Steps:
  1. Combine marinated ingredients. Mix well and reserve.
  2. Lightly sprinkle sesame oil and salt onto the mushroom. Cook both sides of the mushroom on a heated flat pan. Set aside.
  3. Spread beef ribs and score them. Pour pear juice onto the scored beef ribs and marinate for about 30 minutes to soften the meat.
  4. Add marinade onto the softened meat and marinate for another 2 hours.
  5. After 2 hours, grill both sides of the marinated ribs until medium rare.
  6. Place lettuce leaves on the base of a serving dish. Top the lettuce leaves with rice that has been shaped into a 2 inch by 2 inch by ¾ inch square patty. Then, add ssamjang and grilled ribs. Garnish with the mushrooms and pine nuts.
