Fried Fish with Sweet Chilli Sauce Recipe


Fried fish with sweet chilli sauce is a great stir-fry for a busy weeknight. The tangy sauce with red chili is well-balanced and tastes great along with a bowl of rice.

Ingredients:

300g firm white fish or sea bass fillet (cut 1.5cm thick)
2 tbsp lime juice
½ tsp salt
2 tbsp all purpose flour
1 cup oil (for frying)
1 green or red chilli (deseeded and finely julienned)
¼ cup fresh coriander

Sweet chilli sauce

5 red chilli (deseeded and coarsely chopped)
3 tbsp garlic (sliced)
3 tbsp fish sauce
3 tbsp vinegar
3 tbsp sugar
3-4 tbsp water
1½ tbsp garlic (coarsely chopped)
2 tbsp oil




Steps:
  1. Pound red chilli and garlic finely. Heat oil in a wok over medium heat, stir fry chopped garlic only until fragrant, adding the paste, fish sauce, sugar and vinegar, stir well over low heat. Add water and simmer until the sauce thickens. Leave aside.
  2. Coat the fish with lime juice and salt.
  3. Coat the fish with flour thinly and fry in heated oil over medium heat until brown both sides. Set aside over absorbent paper.
  4. Place the sweet chilli sauce in a wok, over medium low heat. Combine the fish and gently stir well until the sauce coats the fish.
  5. Remove from heat. Transfer to a serving plate, garnish with chilli and coriander.
