Fried Eggs in Chilli and Soy Recipe

Ingredients:

500ml vegetable oil
6 hard boiled eggs (peeled)
1 tbsp fresh ginger (grated)
1 tbsp lemongrass (crushed)
4 tbsp sambal oelek
2 small shallots (finely diced)
2 cloves garlic (crushed)
½ tsp shrimp paste (grilled on foil for 1 min)
1 can chopped tomatoes
2 tbsp sugar
4 tbsp dark soy sauce
½ lime (juice only)
½ cup mixed coriander and mint leaves (chopped)




Steps:
  1. Heat oil in a wok and deep-fry the eggs until golden. Drain and set aside.
  2. Carefully pour out most of the hot oil, leaving approximately 2 tbsp in the wok. Return wok to the heat and add the ginger, lemon grass, sambal oelek, garlic, shallot and shrimp paste.
  3. Stir until fragrant, then add in the tomatoes and sugar. Cook until sauce thickens, then add the dark soy sauce and lime juice.
  4. Add eggs, fold through the sauce and serve hot with steamed rice and garnish with herbs.
