Fried and cooked in marmite sauce this crab delicacy is for all you marmite lovers out there. sprinkle it with fresh spring onion for a zesty flavour.

Ingredients:

1kg Mud crab
1 Red chilli (sliced)
50g big onion (sliced)
1 Tbsp chopped spring onion
1 Tbsp Corn starch
2 Tbsp Cooking oil

Sauce:
15g Marmite (Vegemite as alternative option)
50g Tomato sauce
4Tbsp Maggi seasoning
30g of rock sugar
200ml water




Steps:

1. Mix all the sauces ingredients well and leave aside.

2. Cut the Crabs into convenient pieces, rinse and drain. Use kitchen towel to pat dry, add in cornstarch and mix well.Then heat up the oil up to 180 degrees. Deep fry the crab for about 2 minutes until golden brown. Remove and keep aside.

3. Leave 2 Tbsp oil in a preheated wok, add in Marmite sauce mixture, bring to a boil. Cook until the rock sugar is dissolved and slightly thicken, then place in the pre-fried crabs pieces and toss until all are well coated with the sauce or until almost dry.

4. Dish up and serve hot.
