Ingredients:

1 tbsp canola oil
6 cloves garlic (peeled and minced)
1 onion (peeled and chopped)
2 tbsp shrimp paste
1kg pork belly (cut into bite-sized pieces)
1 cup coconut milk
1 cup water
1 cup coconut cream
7 pieces Thai chilies (stemmed and minced)
salt and pepper




Steps:
  1. Heat oil in a pot or large skillet over medium-high heat. Add garlic and saute for few seconds until fragrant. Then, add in onions and cook until translucent.
  2. Put in shrimp paste and stir for a few seconds. Add pork and saute until lightly browned.
  3. Pour in coconut milk and water and gently simmer for about 15 mins. Then, add in coconut cream and chillies, and simmer for another 20 mins or until pork is tender.
  4. Add salt and pepper according to your taste. Serve hot over steamed rice.
