Easy Carrot & Enoki Beef Rolls


Tender marinated beef meets crunchy carrot sticks and chewy enoki mushrooms. These bite-sized morsels that are guaranteed to be a hit on the dinner table. If there isn’t a better way to encourage kids to eat their vegetables, it’ll have to be wrapped in flavourful meat!

Ingredients:

1 pkg thinly sliced beef (chuck or rib eye)
1 carrot (cut into 8cm length sticks)
1 package enoki mushrooms
Salt (to taste)
Pepper (to taste)
Cornstarch

Sauce:

1 tbsp mirin
1 tbsp soy sauce

Sauce:

1 tbsp mirin
1 tbsp soy sauce




Steps:
  1. In a small bowl, combine sauce ingredients.
  2. Boil a small pot of water and blanch carrots.
  3. Season beef with salt and pepper. Place 3 carrot sticks on each sliced beef and roll them up. Then, place a small bunch of enoki mushrooms on each slice of beef and roll them up. Repeat until all beef slices are used.
  4. Dredge each beef roll with cornstarch and shake off the excess.
  5. In a frying pan, heat oil on medium-high heat and pan-fry the beef rolls until browned. Cover with lid for 2-3 mins and turn the rolls over to cook the insides, and around the meat.
  6. Pour the sauce from Step 1 over the meat rolls and turn them over to coat evenly. When the sauce thickens, turn off the heat and transfer to a plate.
