Dry Beef Panaeng Curry
Dry Beef Curry- 5 Fabulous Thai Menu Ideas for Reunion Dinner


This delicious Thai dry beef curry is also known as Penaeng curry. It is a thick and spicy curry from the central region. Its evolution was influenced by Malay cuisine.

Ingredients:

4 tbsp Valcom Panaeng Paste
½ cup TCC Coconut Cream
400g beef rump or skirt steak (cut into thin strips)
1 cup or 1 small can TCC Coconut Milk
½ sweet potato (cut roughly and microwaved until soft)
¼ cup roasted peanuts
2 tbsp Squid Fish Sauce
6 kaffir lime leaves (halved, to garnish)
1 red chilli (thinly sliced, to garnish)
1 tbsp peanuts (to garnish)




Steps:
  1. Heat coconut cream and stir until an oily surface appears.
  2. Add curry paste and fry until fragrant.
  3. Add beef strips, and cook for 5 mins before adding the rest of the coconut milk and remaining ingredients.
  4. Stir well and simmer until meat is tender
  5. Garnish with peanuts, kaffir lime leaves and red chillies.
