Teppanyaki fish with soba noodle salad


Teppanyaki is one of the most popular styles in Japanese cooking. Salmon, sword fish and soba noodles in that style will ensure you have a never-had-before eating experience! Try this Japanese combination teppanyaki fish with soba noodle salad recipe.

Ingredients:

2 salmon fillets (sliced)
2 fillets Sword fish (halved)
400g Obento Soba Noodles (prepared as per pack instructions)
50g Obento Pickled Ginger
1 red capsicum (finely sliced)
1 tsp Yeo's Sesame Oil
2 tbsp Yeo's Light Soy Sauce
shaved cucumber, salad leaves, snow pea shoots and lime wedges (to garnish)

Marinade

50ml Obento Mirin Seasoning
50ml Obento Rice Wine Vinegar
25ml Yeo's Light Soy Sauce
1 lime (juiced & zested)




Steps:
  1. Combine the mirin, rice wine vinegar, light soy, lime juice and the zest in a glass bowl and mix well. Marinate the fish pieces for up to 1 hr.
  2. Toss noodles together with the pickled ginger and capsicum.
  3. Heat a teppanyaki plate or non-stick pan over medium heat for 2-3 mins, brush the plate with a little oil and sear fish on each side for 1-2 mins or until cooked.
  4. Arrange the soba noodles on the plates decoratively, place the fish over the noodles and drizzle with the combined sesame oil and soy sauce. Garnish this teppanyaki fish soba noodle salad with cucumber, salad greens and lime wedges.

Note: In Japan, teppanyaki refers to dishes cooked using an iron plate. Fish can be replaced with other types of seafood or meat.
