Coconut Red Curry Soup with Seafood Recipe - Thai Dish


Red curry is a popular Thai dish consisting of curry paste to which coconut milk is added. This dish normally has a soup-like consistency and is served in a bowl and eaten with steamed rice

Ingredients:

1 tsp vegetable oil
2 tbsp Valcom Red Curry Paste
400ml TCC Coconut Milk
400ml chicken stock
1 tbsp Squid Fish Sauce
8 cooked prawns (peeled and deveined)
100g Double Phoenix Bean Vermicelli
1 lime (juiced)
coriander (for garnish)




Steps:
  1. Soak bean vermicelli in hot water for 10 mins. Drain, rinse in cold water and set aside.
  2. Fry red curry paste in oil over medium heat for 1 min until fragrant.
  3. Add coconut milk and chicken stock to paste and bring to the boil. Add prawns, fish sauce and lime juice.
  4. Place bean vermicelli in individual bowls to serve. Top with prawns and red curry soup. Garnish with coriander.
