Chicken soup for the soul, literally! Wonderfully delicious and nutrient-rich, warm up with this Chinese Chicken Herbal Soup recipe. Recipe by Asian Inspirations.

Ingredients:

1 whole chicken (cut into bite-sized pieces) or 3 chicken Maryland pieces
20g dang shen (codonopsis pilosulae)
20g yu zhu (polygonatum odoratum)
20g huai shan (dried Chinese yam)
20g gou qi (dried goji berries)
10g bei qi (astragalia)
10g dang gui (angelica root)
10g chuan xiong (rhizome ligustici)
20g hong zao (dried red dates)
2L water
Salt (to taste)




Steps:
  1. Rinse all herbs under running water.
  2. In a large pot, bring 2L of water to boil, add the chicken and all of the herbs.
  3. Turn down heat to low and let simmer for at least 2 hours. Remove all froth on the surface of the soup.
  4. Season with salt to taste, turn the heat back up and bring the soup to a boil before turning off the heat. Serve hot.
  5. If herb ingredients are not easily obtained, there are pre-portioned Chinese Herbal Chicken soup sachets available at Asian grocery stores.
