Chinese Fried Rice

Fried rice has become a standard dish on any Chinese take-away menu, but it's just as easy to cook the dish at home. Great way of using any left-over cooked rice sitting in the fridge. Try this best chinese fried rice recipe.

Ingredients:

2 tbsp cooking oil
2 eggs (beaten)
2 cups Jasmine rice (cooked and cooled)
3 Chinese pork sausage (diced)
1 cup fresh bean sprouts
1 carrot (finely diced)
1 stalk spring onion (finely sliced)
2 tbsp Lee Kum Kee Premium Oyster Sauce
3 tbsp Lee Kum Kee Premium Light Soy Sauce
½ tsp Yeo's Sesame oil
1 tbsp salt




Steps:
  1. Heat a wok or frying pan with 1 tbsp oil, then add eggs and cook until set. Cut into strips and set aside to use later.
  2. Heat remaining oil in a wok until smoking, then add Chinese sausage and stir-fry for 1 min.
  3. Add cold rice, pressing against the side of the wok to remove any lumps, then stir in oyster sauce, soy sauce, carrots, bean sprouts, sesame oil and spring onion and stir-fry for 2 mins.
  4. Serve garnished with reserved egg.

Tip: It is essential to the success of this dish to use cooked, cold rice.
