These addictive, melt in your mouth Cashew Nut Cookies are found in most South East Asian Chinese households during Lunar New Year. Each family has their own spin on this recipe! These cookies always run out fast, so be prepared to make a second batch really soon.

Ingredients:

125g salted butter (softened)
85g icing sugar (sifted)
1 egg yolks
¼ tsp vanilla extract
240g plain flour (sifted)
100g ground cashew nut
40g custard powder
¼ tsp baking powder
1 egg yolk (lightly beaten for glazing)
Cashew nuts (halved and toasted, for topping)




Steps:
  1. Combine butter, icing sugar, egg yolk and vanilla extract.
  2. Mix in plain flour, ground cashew nut, custard powder and baking powder to form dough.
  3. Place dough in between 2 plastic sheets, roll into 5mm thick. Cut using a cookie cutter.
  4. Place onto a baking tray lined with baking paper. Press half or whole cashew nut on top of the cookies and glaze with beaten egg yolk.
  5. Bake in a preheated oven at 170°C for about 20-30 mins or until golden brown.
  6. Cool cookies on rack before storing them into an airtight container.
