BBQ Pork and Vermicelli Salad
BBQ Pork & Vermicelli Salad Recipe


Salad consisting of Chinese BBQ pork and vermicelli noodles

Ingredients:

200g Chinese BBQ (char siu) pork
125g Double Phoenix Bean Vermicelli
½ cup mint leaves
½ cup coriander leaves
½ cup spring onions
½ cup Chinese garlic chives
1 cup bean shoots
30ml lime juice
15ml Squid Fish Sauce
1 tsp chilli paste in soy bean oil
¼ cup peanuts




Steps:
  1. Soak vermicelli noodles in hot water for 5 mins, drain and allow to cool.
  2. Finely slice spring onion. Cut Chinese garlic chives into 3cm strips. Thinly slice Chinese BBQ pork.
  3. Deshell the peanuts and crush into chunky pieces.
  4. In a bowl, prepare the dressing by mixing the chilli paste, lime juice and fish sauce.
  5. Add noodles and Chinese BBQ pork to the dressing.
  6. Combine the rest of the ingredients in a bowl and toss through.
  7. Garnish with peanuts and serve warm.

Hint: Chinese-style BBQ pork is easily made at home. Simply marinate 500g of pork fillets overnight with half a bottle of Lee Kum Kee Char Siu Sauce, then bake in a medium oven for 30 mins.
