Bakwan Jagung (Indonesian Corn Fritters)

Ingredients:

3 fresh corn
1½ cups water
1½ cups plain flour
¾ cups rice flour
2 stalks spring onions, thinly sliced
Bunch of chopped coriander
3 eggs
8 small shallots (minced)
6 cloves garlic (minced)
salt
freshly ground black pepper
oil (for deep frying)




Steps:
  1. Separate corn kernels from the cob and transfer into a bowl.
  2. Combine all the remaining ingredients. Mix well and set aside.
  3. Heat oil and then scoop in corn batter, a tablespoonful at a time. Deep-fry for 2-3 minutes on each side and transfer on a wire rack to drain excess oil.
  4. Serve hot with sweet chilli sauce, vinegar dip or tomato sauce.
